Soft boiled egg on quinoa, spinach and shallot - Conventional Method |
- ½ quinoa + 1 cup water
- 2 eggs
- 1 tbs olive oil
- 1 garlic clove, crushed
- ⅔ cup english spinach, shredded
- 2 spring onion, sliced thinly
- pinch sea salt
- pinch cracked pepper
- Prepare the quinoa by rinsing under water to remove grittiness. Place in a small saucepan with water and salt, cover and cook for 15 minutes or until moisture is absorbed. Remove from heat and place a paper towel between the pot and lid to absorb moisture. Fluff with fork.
- Soft boil the eggs by adding to boiling water and simmering for 6 minutes.
- Heat oil over a medium frypan. Add garlic, spinach and spring onion and sauté for 3 minutes until spinach starts to wilt.
- Add the quinoa and salt and heat through for 1 minute.
- Spoon quinoa into serving bowls and serve with boiled egg on top.Season with cracked pepper.
