Soft boiled egg on quinoa, spinach and shallot - Thermomix Method |
- 250g water
- 100g quinoa
- 2 eggs
- 1 garlic clove
- ⅔ cup english spinach
- 2 spring onion
- 20g olive oil
- pinch sea salt
- pinch cracked pepper
- Prepare the quinoa by rinsing under water to remove grittiness.Place water and quinoa into mixing bowl. Cook 15 min/100C/speed 2. Remove quinoa, let rest for 5 minutes and then fluff with fork.
- To boil eggs place 500g water in mixing bowl and place eggs in TM basket. Insert basket and cook 11 min/Varoma/speed 1 for soft boiled or 14 min/Varoma/speed 1 for hard boiled. Clean bowl.
- Add garlic,spinach and spring onion to bowl and chop 5 sec/speed 5.
- Add oil and saute for 3 min/speed 1/Varoma.
- Add cooked quinoa and salt and stir speed 1/1 min/100C.
- Spoon quinoa into serving bowls and serve with boiled egg on top. Season with cracked pepper.
