Strawberry & Raspberry Jam Recipe

Strawberry & Raspberry Jam Gluten Free-

I love strawberry and raspberry jam equally so I decided to combine two of my favourite berries to perfectly compliment my delicious gluten free scones. Homemade jam is infinitely better than anything you will buy in the shops – much fruitier, zestier and yummier!If you want a pure strawberry jam simply replace raspberries with strawberries. Always remember to substitute by weight.

Strawberry & Raspberry Jam - Thermomix
Serves: Makes 2 small jam jars.
 
Ingredients
  • 250g washed raspberries
  • 250g washed strawberries
  • 200g caster sugar
  • zest ½ lemon
  • 1 tsp lemon juice
Instructions
Thermomix Method
  1. Place all ingredients in Thermomix.
  2. Set to 100C, Speed 1, 60 min.
  3. Test for setting by placing a spoonful of jam on a cold saucer (place the saucer in the freezer to cool). Run your finger through the jam – if the line remains, the jam is ready.
  4. Pour into sterilised jars and seal tightly.
Conventional Method
  1. Place strawberries in a saucepan and crush with a potato masher.
  2. Add sugar,zest and lemon juice. Stir over low heat until sugar dissolves.
  3. Bring to the boil until mixture reaches 100C.
  4. Test for setting by placing a spoonful of jam on a cold saucer (place the saucer in the freezer to cool). Run your finger through the jam – if the line remains, the jam is ready. If jam has not set, boil for longer.
  5. Pour into sterilised jars and seal tightly.
