Soft boiled egg on quinoa, spinach and shallot recipe

Quinoa is a gluten free superfood that originates from South America. It is packed with protein, fibre and essential vitamins and minerals. It is commonly referred to as a grain but is actually a seed. Quinoa is extremely versatile as it has a soft, fluffy texture and slightly nutty taste that complements both sweet and savoury dishes.

This superfood power breakfast will keep you feeling fuller for longer and it is packed with great savoury flavours. You can replace spinach with kale for an even greater boost of antioxidants. Anything green and lean seems to work so have fun experimenting.

Soft boiled egg on quinoa, spinach and shallot - Conventional Method
Serves: Serves 2
 
Ingredients
  • ½ quinoa + 1 cup water
  • 2 eggs
  • 1 tbs olive oil
  • 1 garlic clove, crushed
  • ⅔ cup english spinach, shredded
  • 2 spring onion, sliced thinly
  • pinch sea salt
  • pinch cracked pepper
Instructions
  1. Prepare the quinoa by rinsing under water to remove grittiness. Place in a small saucepan with water and salt, cover and cook for 15 minutes or until moisture is absorbed. Remove from heat and place a paper towel between the pot and lid to absorb moisture. Fluff with fork.
  2. Soft boil the eggs by adding to boiling water and simmering for 6 minutes.
  3. Heat oil over a medium frypan. Add garlic, spinach and spring onion and sauté for 3 minutes until spinach starts to wilt.
  4. Add the quinoa and salt and heat through for 1 minute.
  5. Spoon quinoa into serving bowls and serve with boiled egg on top.Season with cracked pepper.

Serves: 2
 
Ingredients
  • 250g water
  • 100g quinoa
  • 2 eggs
  • 1 garlic clove
  • ⅔ cup english spinach
  • 2 spring onion
  • 20g olive oil
  • pinch sea salt
  • pinch cracked pepper
Instructions
  1. Prepare the quinoa by rinsing under water to remove grittiness.Place water and quinoa into mixing bowl. Cook 15 min/100C/speed 2. Remove quinoa, let rest for 5 minutes and then fluff with fork.
  2. To boil eggs place 500g water in mixing bowl and place eggs in TM basket. Insert basket and cook 11 min/Varoma/speed 1 for soft boiled or 14 min/Varoma/speed 1 for hard boiled. Clean bowl.
  3. Add garlic,spinach and spring onion to bowl and chop 5 sec/speed 5.
  4. Add oil and saute for 3 min/speed 1/Varoma.
  5. Add cooked quinoa and salt and stir speed 1/1 min/100C.
  6. Spoon quinoa into serving bowls and serve with boiled egg on top. Season with cracked pepper.
